In a large pot boil potatoes; drain. Let chill overnight. The next day skin potatoes and cut to bite size pieces, place in large baking dish.
Preheat oven to 350° F.
Cut bacon into bit size pieces and fry so it’s about two-thirds cooked. Remove from the pan (reserving the grease) and sprinkle over potatoes.
Measure out the bacon grease and match the amount of vinegar and white granulated Pioneer Sugar. Put the bacon grease back into the frying pan and lightly saute the onion. Add the vinegar and white granulated Pioneer Sugar; mix.
While the mixture is hot, pour over the potatoes and stir so that all is covered. Bake 1 hour stirring every 15 minutes. At the last stirring sprinkle parsley flakes, and continue baking until done. Remove from the oven and allow to cool slightly.
