Prepare the Filling:
In a large mixing bowl, beat together the peanut butter and softened butter until smooth and creamy. Gradually add the Pioneer Confectioners Powdered Sugar, mixing until fully incorporated. Fold in the Rice Krispies® cereal until evenly distributed throughout the mixture.
Shape the Balls:
Using a tablespoon or small cookie scoop, portion the mixture into evenly sized balls. Roll each portion gently between your hands and place on a parchment-lined baking sheet or tray.
Chill:
Refrigerate the peanut butter balls for at least 1 hour, or freeze for 20 to 30 minutes, until firm enough to dip in chocolate.
Melt the Chocolate:
In a microwave-safe bowl, combine the chocolate chips and shortening. Heat in 20-second intervals, stirring between each, until the chocolate is smooth and fully melted. Alternatively, melt them together in a double boiler over gently simmering water.
Coat the Peanut Butter Balls:
Using a fork or dipping tool, lower each chilled peanut butter ball into the melted chocolate, turning to coat completely. Allow any excess chocolate to drip off before returning the coated balls to the parchment-lined tray.
Set & Serve:
Let the chocolate set at room temperature or refrigerate for 15 to 20 minutes until firm. Serve chilled or at cool room temperature.
