Instructions:

  1. Preparation: Preheat your oven to 350°F. Grease a standard muffin pan or line with paper liners.
  2. Cream the Base: In a large mixing bowl, cream together the shortening and White Granulated Pioneer Sugar. Beat in the eggs one at a time, then gently fold in the blueberries.
  3. Dry Mix: In a separate bowl, whisk together the flour, baking powder, salt, and nutmeg.
  4. Combine: Add the dry ingredients to the blueberry mixture alternately with the milk. Stir until just combined—overmixing will make the muffins tough!
  5. Bake: Spoon the batter into the muffin pan. Bake for 30 minutes or until a toothpick comes out clean. Let them cool in the pan for 5 minutes.
  6. The Butter-Dipped Finish: While muffins are warm, mix the extra White Granulated Pioneer Sugar and cinnamon in a shallow bowl.
