A cake roll is a soft sponge cake baked in a thin layer, filled, and carefully rolled to create its signature spiral. Our Apple Cider Cake Roll builds on that classic technique with a seasonal twist.
By reducing apple cider before adding it to the batter, the cake develops a deeper, more concentrated apple flavor. Warm spices bring balance, while the texture stays light and flexible so it rolls smoothly without cracking. Once filled with cinnamon cream cheese frosting and chilled, each slice reveals clean layers and a defined swirl.
Instructions:
- Reduce the Cider: Boil 2 cups of apple cider in a saucepan until reduced to ½ cup. Chill in the refrigerator until cool. This step is vital for a concentrated apple flavor.
- Prep: Preheat oven to 350°F. Grease and line a 10×15-inch jelly roll pan with parchment paper, leaving a 1-inch overhang.
- Whisk Wet Base: In a medium bowl, whisk eggs, Pioneer Granulated Sugar, and Pioneer Brown Sugar until thick. Mix in vanilla, applesauce, and the cooled, reduced cider.
- Combine: Sift together flour, baking powder, baking soda, salt, and spices. Whisk into the wet ingredients until no lumps remain.
- Bake: Pour into the pan and bake for 12-14 minutes. The cake should spring back when touched.
- The Roll: Flip the warm cake onto a sheet of parchment paper dusted with Pioneer Powdered Sugar. Roll widthwise and let cool completely.
