Pioneer French Toast

  • 4 egg whites
  • ¼ C skim milk
  • ½ tsp. almond extract
  • 1 T Pioneer® Golden Light Brown Sugar
  • ¼ tsp. cinnamon
  • 1 tsp. vegetable oil
  • 6 slices bread
  • 1 ripe banana, sliced

Cinnamon Sugar:

  • 2 T Pioneer® Sugar
  • 1 tsp. cinnamon
  • slivered almonds, optional


  1. Beat egg whites with whisk in large bowl until frothy. Add milk, almond extract, Pioneer® Golden Light Brown Sugar and cinnamon.
  2. Heat oil in non-stick skillet over medium-high heat. Dip each slice of bread in egg mixture. Place bread in skillet and cook each side 2-3 minutes until browned. If necessary, spray pan with non-stick cooking spray and continue to cook all remaining slices of bread.

Cinnamon Sugar:

  1. Mix Pioneer® Sugar with cinnamon. Top each toasted slice with banana slices and sprinkle with cinnamon sugar and serve. Sprinkle with slivered almonds for a little crunch!

Cooks Note

Walnuts are another popular addition instead of almonds, just eliminate almond extract and use vanilla instead when mixing up the batter.
