Mississippi Mud Cake

  • 1 C pecans, chopped
  • 1 C butter
  • ½ C semi-sweet chocolate chips
  • 2 C Pioneer® Sugar
  • 1 ½ C all-purpose flour
  • ½ C unsweetened cocoa powder
  • 4 eggs
  • 1 tsp vanilla
  • ¾ tsp salt
  • 1 bag (10.5 oz) mini marshmallows


  • ½ C butter
  • 1/3 C unsweetened cocoa powder
  • 1/3 C milk
  • 1 tsp vanilla
  • 3 ¾ C Pioneer® Confectioners Powdered Sugar


  1. Preheat oven to 350° F. Grease a 10 x 15-inch jelly roll baking pan; set aside.
  2. In a small baking pan, toast pecans for about 5 minutes or until you smell warm pecans. Remove and set aside.
  3. In a saucepan, melt butter with the chocolate over low heat.
  4. In a mixing bowl whisk together, Pioneer® Sugar, flour, and cocoa powder. Add in eggs, vanilla and salt; beat until smooth. Add in warmed butter & chocolate; mix.
  5. Pour into prepared pan and bake for about 20 minutes.
  6. Remove cake from oven and sprinkle marshmallows evenly over the top. Return to the oven and finish baking for another 8-10 minutes or until the marshmallows are a golden brown.
  7. Drizzle with the frosting and sprinkle with pecans and chocolate flakes.

Frosting Directions:

  1. In a saucepan over medium-high heat, add butter, cocoa powder and milk. Cook, stirring constantly, for 2 minutes or until slightly thickened.
  2. Remove from heat and add vanilla and Pioneer® Confectioners Powdered Sugar, 1 cup at a time – stirring/beating until smooth after each addition.
