Cherry Poppy Seed Muffins

  • 2 C all-purpose flour
  • ¾ C Pioneer® Sugar
  • 1 T poppy seed
  • 1 T baking powder
  • ¼ tsp salt
  • 1 C milk
  • ¼ C butter, melted
  • 1 egg, slightly beaten
  • ½ C dried tart cherries
  • 3 T orange zest


  1. Preheat oven to 400° F. Line a muffin tin with paper or foil liners; set aside.
  2. In a large mixing bowl combine flour, Pioneer® Sugar, poppy seed, baking powder and salt. Add milk, melted butter and egg; stir just until dry ingredients are moistened. Gently stir in cherries and orange zest; mix.
  3. Fill prepared muffin cups three-quarters full.
  4. Bake for 18 – 22 minutes or until wooden pick inserted in center comes out clean. Let cool in pan 5 minutes. Remove & serve warm.
