  • 10 C zucchini squash, diced
  • 4 C onions, chopped
  • 5 T salt


  • 2 C vinegar
  • 3 ½ C Pioneer® Sugar
  • 1 tsp nutmeg
  • 1 tsp dry mustard
  • 1 tsp turmeric
  • 2 tsp celery seed
  • ½ tsp black pepper
  • 1 green pepper, diced
  • 1 red pepper, diced


  1. Mix zucchini, onions and salt together and let stand overnight.
  2. Next day; drain and rinse zucchini mixture.
  3. In a saucepan add vinegar, Pioneer® Sugar, nutmeg, mustard, turmeric, celery seed, black pepper, green pepper and red pepper, cook 30 minutes over medium heat. Pour into jars and seal.
