  • 4 eggs
  • 1 C vegetable Oil
  • 1 tsp. vanilla
  • 2 C Pioneer® Sugar
  • 2 C flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 C nuts (pecans), crushed
  • 2 C zucchini, peeled and grated
  • 1 jar (16 oz.) maraschino cherries, drained & chopped

Cream Cheese Frosting:

  • 4 T margarine or butter, softened
  • 3 oz. cream cheese, softened
  • 1 tsp. vanilla
  • 2 C Pioneer® Confectioners Powdered Sugar


  1. Preheat oven to 350° F. Lightly spray a jelly roll pan; set aside.
  2. In a large mixing bowl beat the eggs together then add the oil and vanilla; mix. Add in the Pioneer® Sugar, flour, baking soda, baking powder, cinnamon and salt. Mix together well. Add the nuts, zucchini and cherries; mix until blended. Bake for 30-35 minutes. Cool then frost.

Frosting Directions:

  1. In a mixing bowl cream together margarine, cream cheese, vanilla and Pioneer® Confectioners Powdered Sugar until smooth. Spread over cooled bars then refrigerate.
