White Chocolate Oatmeal Cranberry Drop Cookies

  • 1 C whole grain pastry flour
  • 1 tsp. baking powder
  • ½ tsp. ground cinnamon
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ½ C Pioneer® Golden Light Brown Sugar, packed
  • ½ C Pioneer® Sugar
  • ¼ C unsweetened applesauce
  • 2 T canola oil
  • 1 large egg
  • 1 tsp. vanilla
  • 1 ½ C old-fashioned rolled oats
  • ¾ C dried cranberries
  • 1 C white chocolate chips


  1. Preheat oven to 375° F. Coat two large baking sheets with cooking spray; set aside.
  2. In a small bowl combine the flour, baking powder, cinnamon, baking soda and salt. In a large bowl combine the Pioneer® Golden Light Brown Sugar, Pioneer® Sugar, applesauce, oil, egg and vanilla. Stir until well blended. Add flour mixture and stir until combined. Stir in oats, dried cranberries and white chocolate chips. Drop the batter by rounded teaspoonful 2-inches apart onto the prepared baking sheets. Bake for 10-12 minutes or until golden brown. Let stand on baking sheet for 2 minutes before moving to a rack to cool completely.
