Two Chip Delights

  • 1 stick butter or margarine, softened
  • 1 C shortening
  • 1 C Pioneer® Golden Light Brown Sugar, packed
  • 1 ⅓ C Pioneer® Sugar
  • 4 eggs
  • 4 tsp. vanilla extract
  • ½ C quick-cooking oatmeal
  • 2 tsp. baking soda
  • 3 C all-purpose flour
  • 1 tsp. cinnamon
  • 1 ½ tsp. salt
  • 2 C walnuts, chopped
  • 2 C white chocolate chips
  • 2 C semisweet or milk chocolate chips


  1. Preheat oven to 350° F. Lightly grease (or spray) baking sheets; set aside.
  2. In a large mixing bowl cream together butter, shortening, Pioneer® Golden Light Brown Sugar and Pioneer® Sugar until creamy and fluffy. Add eggs and beat well before adding vanilla.
  3. In a medium mixing bowl, combine oatmeal, baking soda, flour, cinnamon and salt; mix well. Slowly add dry mix to creamed mixture, making sure everything is mixed well. Once combined, add walnuts and both chips, stir until just mixed.
  4. Using ice cream scoop, drop batter onto baking sheets about 3-inches apart. Bake for approximately 14-16 minutes until lightly browned and center is no longer moist. Let set on baking sheets for a couple of minutes before moving to wire racks.
