Triple Chocolate Truffle Cookies

  • ½ C Pioneer® Confectioners Powdered Sugar
  • 1 C butter, slightly softened
  • 1 ½ tsp. vanilla
  • 1 oz. unsweetened chocolate, melted and cooled
  • 2 ¼ C all-purpose flour
  • ¼ tsp. salt
  • 1 C semi-sweet chocolate chips
  • ¼ C Pioneer® Confectioners Powdered Sugar
  • 2 T unsweetened cocoa


  1. Preheat oven to 375° F. Lightly grease cookie sheets; set aside.
  2. In a large bowl beat Pioneer® Confectioners Powdered Sugar and butter until light and fluffy. Add vanilla and melted chocolate; blend well.
  3. Combine flour and salt in a small bowl. With a mixer running at low speed, blend in flour mixture. Stir in chocolate chips with a wooden spoon. Shape into 1-inch balls; place on prepared cookie sheets. Bake for 10-12 minutes. Cool completely on wire racks.
  4. In a small bowl combine ¼ cup Pioneer® Confectioners Powdered Sugar and cocoa. Roll cooled cookies in cocoa mixture. Store in air tight container.
