  • 1 ½ lbs. 85% lean ground beef
  • 1 lb. white mushrooms, sliced thin
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 T fresh thyme, minced
  • salt and pepper to taste
  • 3 T all-purpose flour
  • 1 ½ C whole milk
  • 1 ½ C chicken broth
  • 1 ½ C grated Parmesan cheese
  • 1 C frozen peas
  • 1 C frozen corn
  • 2 lbs. frozen tater tots


  1. Preheat oven to 450° F. Place oven rack in the upper middle of the oven.Combine beef, mushrooms, onion, garlic, thyme, salt and pepper in a Dutch oven. Cook over medium high heat until nearly all liquid is evaporated (20 – 25 minutes), stirring occasionally, breaking up the meat with a spoon.
  2. Stir in the flour and cook 1 minute. Add the milk and broth, bringing to a simmer, scraping up any brown bits. Cook until the mixture is slightly thickened (about 3 minutes). Remove from heat and add the Parmesan. 
  3. Transfer to a 9 x 13-inch baking dish. Sprinkle peas and corn over the beef mixture. Lightly arrange tater tots in an even layer over the top. Do not press them down into mixture. 
  4. Bake until the tater tots are a deep golden brown and the filling is bubbly; approximately 35-38 minutes. Rotate dish halfway through the baking process. Let cool 15 minutes before serving.
