Sweet Slow-Cooker Pork Chops

  • 2 T canola oil
  • 4-6 pork loin chops, about 1-inch thick
  • pepper for seasoning
  • 2 T soy sauce
  • ¾ C chicken broth
  • 2 T Pioneer® Golden Light Brown Sugar, packed
  • ¼ tsp red pepper flakes, optional
  • 1 small onion, chopped or sliced
  • 2 cloves garlic, finely minced
  • 1-2 T cornstarch
  • 1-2 T cold water
  • mashed potatoes or rice (for serving)


  1. In a 12-inch skillet, heat the oil over medium-high heat until it is simmering and hot. Season the pork chops on both sides with pepper. Brown the pork chops for 1-2 minutes on each side until lightly browned. Set on a plate until ready to transfer to slow cooker.
  2. Turn on slow cooker to low setting. Add soy sauce, chicken broth, water, Pioneer® Golden Light Brown Sugar and red pepper flakes to slow cooker, stir until sugar is dissolved.
  3. Add the onion and garlic to the drippings in the frying pan. Cook for about a minute until onion starts to tenderize. Add to the broth and blend in. Add the browned chops to the broth.
  4. Cover the slow cooker and cook on low for 6 to 7 hours until the meat is tender.
  5. Remove the meat from cooker and keep warm. Pour broth into sauce pan and heat to boiling, add more chicken broth at this time if you want a bit more sauce. Mix cornstarch and water together until smooth. Whisk into the boiling broth to make the sauce as thick as you prefer.
  6. Serve with rice or mashed potatoes.
