Sweet Refrigerator Pickles

Pickle Concoction:

  • 2 MED cucumbers (thinly sliced)
  • 1 MED sweet onion
  • ¼ C sweet banana pepper
  • ¼ C red bell pepper


  • 1 C apple cider vinegar
  • 1 ½ C Pioneer® Sugar
  • ½ tsp. mustard seeds
  • ½ tsp. celery seed
  • 1 tsp. cracked black pepper


  1. Thinly slice cucumbers, onion and peppers and place in a clean sterile container.
  2. In a saucepan add apple cider vinegar, Pioneer® Sugar, mustard seed, celery seed and black pepper, bring to a boil; reduce heat and simmer for 4 – 5 minutes.

For Fancy Container:

  1. Pour hot brine over pickles… let pickle concoction cool and top off with more brine. Enjoy after a minimum of 3 hours in refrigerator. Lasts for no more than two months. Might last the evening!

Potluck style:

  1. Pour all of hot brine over pickles, cover and store in refrigerator a minimum of 3 hours before serving.
