  • 25 LG cucumbers
  • 6 green peppers
  • 6 small onions
  • 1 stalk of celery
  • water
  • salt
  • 2 oz. mustard seed
  • ½ oz. celery seed
  • 1 T turmeric
  • 2 quarts vinegar
  • 8 C Pioneer® Sugar


  1. Peel and chop cucumbers into chunks. Slice the green peppers, and onion to managable sizes. Trim and cut up the celery for grinding. Add the vegetables to a food processor and grind them together. Scrape into a large bowl and add enough water to just cover and salt well; stir. Let stand for 24 hours in salt water.
  2. The next day, drain the vegetables and squeeze dry as best as you can. Use a cheese cloth if needed. Add mustard seed, celery seed, turmeric, vinegar and Pioneer® Sugar. Mix well.
  3. Process as directed by Ball or Kerr and store in pint-size jars.
