  • 1 ¼ C graham cracker crumbs
  • ¾ C + 2 T butter, softened; divided
  • ½ C Pioneer® Sugar
  • ½ C Pioneer® Golden Light Brown Sugar, packed
  • 1 egg
  • 1 tsp. vanilla
  • 1 C all-purpose flour
  • 1 jar (7 oz.) marshmallow fluff
  • 2 C Pioneer® Confectioners Powdered Sugar
  • 1 LG (4.4 oz.) chocolate bar, grated
  • 1 pkg. (12 oz.) semi-sweet chocolate chunks
  • ½ tsp. salt
  • ½ tsp. baking soda


  1. Preheat oven to 350° F.
  2. Crush graham crackers in a food processor until very fine crumbs. Combine with flour, baking soda and salt in a mixing bowl; set aside.
  3. In a large mixing bowl, cream together 3/4 cup of butter, Pioneer® Sugar and Pioneer® Golden Light Brown Sugar until light and fluffy. Stir in egg and vanilla. Add flour mixture and grated chocolate bar, mix until well-combined. Stir in 1 cup of the semi-sweet chocolate chunks.
  4. Scoop by tablespoons onto a baking sheet and bake about 7 minutes per batch. Transfer to a rack and cool completely.
  5. In a separate bowl combine the marshmallow with 1 cup Pioneer® Confectioners Powdered Sugar.
  6. Coat a clean surface with the remaining confectioners’ sugar. Roll the marshmallow mixture onto the surface into a log about the same diameter or slightly bigger than your cookies. Cut pieces off the log and sandwich them between the cookies.
  7. Melt the remaining chocolate in a double boiler or in the microwave with the remaining butter. Dip the sandwiches in the chocolate and place on waxed paper or aluminum foil to cool and set. Refrigerate until ready to eat.
