  • 1 C butter, softened
  • 1 C Pioneer® Sugar
  • 2 T milk
  • 1 tsp. vanilla or rum flavoring
  • 2 ½ C all-purpose flour, sifted
  • ¾ C red & green candied cherries, finely chopped
  • ½ C pecans, finely chopped
  • ¾ C flaked coconut


  1. In a mixing bowl, cream together butter and Pioneer® Sugar; blend in milk and vanilla or rum flavoring. Stir in flour (in small amounts), candied cherries and pecans. Remove batter from mixing bowl and roll into a 2-inch thick by 8-inch long log. Spread out coconut and roll dough in the coconut until completely covered. Wrap in waxed paper and then aluminum foil; pinch to seal. Chill for several hours or overnight.
  2. Preheat oven to 375° F.
  3. Remove cookies from refrigerator/freezer and slice ¼-inch thick pieces and place on an ungreased cookie sheet. Bake for 10-12 minutes or until edges are golden. Place on rack to cool.
