Reduced Calorie Sugar Cookie

  • 6 T butter (no substitutes), softened
  • ½ C Pioneer® Sugar
  • ½ C Pioneer® Golden Light Brown Sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 T canola oil
  • 1 T light corn syrup
  • 1 ½ C flour
  • ¼ C cornmeal
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 ¼ C colored Pioneer® Sugar of your choice

Colored Sugar:

  • 1 C Pioneer® Sugar
  • 1 drop food coloring


  1. In a mixing bowl, beat butter, Pioneer® Sugar and Pioneer® Golden Light Brown Sugar for 2 minutes. Add egg and vanilla; mix well. Gradually beat in oil and corn syrup separately.
  2. In a separate bowl combine the flour, cornmeal, baking powder and salt. Add to creamed mixture just until blended. Divide in half; wrap each portion in plastic wrap. Refrigerate for at least 2 hours.
  3. Preheat oven to 350° F. Lightly spray cookie sheets with cooking spray; set aside.
  4. On a lightly floured surface, roll dough out to ¼-inch thickness. Cut out dough with lightly floured cookie cutter (your choice). Place 2-inches apart on baking sheets. Sprinkle each cutout with 2 teaspoons colored sugar. Bake for 7-9 minutes or until set and bottoms are lightly browned. Cool for 2 minutes before removing to wire racks.

Colored Sugar Directions:

  1. In a bowl add Pioneer® Sugar and add food coloring. Mix with fingers. Sprinkle on cookies.
