Beat egg whites with whisk in large bowl until frothy. Add milk, almond extract, Pioneer Golden Light Brown Sugar and cinnamon.
Heat oil in non-stick skillet over medium-high heat. Dip each slice of bread in egg mixture. Place bread in skillet and cook each side 2-3 minutes until browned. If necessary, spray pan with non-stick cooking spray and continue to cook all remaining slices of bread.
Mix white granulated Pioneer Sugar with cinnamon. Top each toasted slice with banana slices and sprinkle with cinnamon sugar and serve. Sprinkle with slivered almonds for a little crunch.
Walnuts are another popular addition instead of almonds, just eliminate almond extract and use vanilla instead when mixing up the batter.
