Raspberry Granola Bars

  • 1 egg white
  • ¼ C butter, softened
  • ¼ C Pioneer® Golden Light Brown Sugar, packed
  • ¼ C canola oil
  • 1 tsp. vanilla
  • 1 ¼ C all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 ½ C oats & honey granola
  • 1 C raspberry fruit spread


  1. Preheat oven to 375° F. Lightly grease an 8-inch square pan; set aside.
  2. In a large bowl, beat egg white, butter, Pioneer® Golden Light Brown Sugar, canola oil and vanilla until creamy. Beat in flour, baking powder and baking soda. Stir in granola. Press about two-thirds of the dough into the bottom of the pan. Spread spreadable fruit over dough to within ½-inch of edges. Crumble remaining one-third of dough on top of the fruit.
  3. Bake 25-30 minutes or until golden brown and set. Cool completely, about 30 minutes.
