Pete’s Festive Fruit Bars

  • 4 C walnut halves
  • 1 C dried, pitted cherries
  • 1 C dried navel oranges, chopped
  • 1 C raisins
  • 1 C dried blueberries
  • 1 C dried apples, chopped
  • 1 C + 2 T flour
  • 1 C + 2 T Pioneer® Sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 4 eggs
  • 1 T vanilla
  • 1 tsp. rum flavoring
  • 4 T brandy


  1. Preheat oven to 275° F. Prepare 9 x 13-inch baking pan by buttering it, lining with waxed paper, and buttering the paper; set aside.
  2. In a large bowl combine walnuts, cherries, oranges, raisins, blueberries and apples; stir together.
  3. In a separate bowl mix together the flour, Pioneer® Sugar, baking powder and salt. Add this mixture to the fruit mixture; mix together well.
  4. In a small bowl beat the eggs, vanilla and rum flavoring. Pour egg mixture over fruit & flour mixture. Stir until well combined. Spread mixture evenly in the prepared pan. Bake for 1 ½ hours. A toothpick inserted into the bars should come out clean. Cool in pan on wire rack for ½ hour.
  5. Remove from pan and peel paper off while the bars are still warm. Let cool thoroughly before sprinkling with the brandy. Cut into squares and enjoy.

Cook's Note

The bars keep for a long time, tightly covered in refrigerator. If they do dry out, refresh by sprinkling with brandy.
