Orange Pound Cake Loaf

  • 1 ¼ C cake flour
  • ¾ tsp baking powder
  • pinch salt
  • 1 orange
  • ¾ C unsalted butter, softened
  • ¾ C Pioneer® Sugar
  • 3 eggs, lightly beaten


  1. Preheat oven to 350° F. Butter or spray with non-stick cooking spray a glass loaf pan; set aside.
  2. In a small bowl combine flour, baking powder and salt; set aside.
  3. Zest the orange and squeeze about a teaspoon or more of the juice over the zest. Not too much, as you don’t want the batter too wet.
  4. Place the butter and Pioneer® Sugar in a large bowl and cream together for about 5 minutes on medium speed. Add eggs, one at a time, mixing after each addition. Stir in zest. Sift flour mixture over the butter mixture and beat until smooth.
  5. Pour batter into the prepared pan. Run a knife or your finger down the center of the batter to create a groove.
  6. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Cool on a rack for 10 minutes then turn out to cool completely.

Cooks Note

You can easily substitute lemon for the orange. Feel free to top with icing!
