Orange Carrot Muffins

  • ⅓ C margarine
  • ½ C Pioneer® Sugar
  • 2 eggs
  • 1 ¾ C flour
  • 3 tsp. orange zest
  • 1 tsp. baking soda
  • 1 tsp baking powder
  • ⅛ tsp. nutmeg
  • ⅛ tsp. clover
  • ½ C orange juice
  • 2 C carrots, shredded


  1. Preheat oven to 350° F. Line with paper holders a muffin pan; set aside
  2. In a large mixing bowl add the margarine, Pioneer® Sugar and eggs; blend together. Add the flour, orange zest, baking soda, baking powder, nutmeg, clover and orange juice; beat with mixer until blended. Fold in the shredded carrots; mix. Scoop heaping tablespoons to prepared paper lined muffin pan (fill about ⅓ to ½ full). Bake for 10 or 12 min. Remove to rack to cool.
