Oatmeal Toffee Cookies

  • 1 C butter, softened
  • 1 C Pioneer® Golden Light Brown Sugar
  • ½ C Pioneer® Sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 ½ C flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 3 C rolled oats
  • 1 C toffee bits
  • ¾ C nuts, chopped (optional)


  1. Preheat oven to 350° F. Spray cookie sheets with non-stick cooking spray or place parchment paper on sheet; set aside.
  2. In a large bowl, cream together butter and both Pioneer® Sugars. Beat in the eggs, one at a time, and stir in vanilla.
  3. Combine flour, baking soda and cinnamon in a separate bowl. Gradually add to the creamed mixture. Stir in oats, toffee bits and nuts. Drop by spoonful onto your prepared cookie sheet. Bake 8-10 minutes. Remove from oven and cool on cookie sheet for a couple of minutes then place on cooling rack. Store in airtight container when completely cool.
