  • 2 ½ C oat bran, uncooked
  • ¼ C Pioneer® Golden Light Brown Sugar, firmly packed
  • ¼ C nuts, chopped
  • ¼ C currants
  • 1 tsp. baking powder
  • ¼ tsp. salt (optional)
  • 4 egg whites, lightly beaten
  • ¾ C skim milk
  • ¼ C honey
  • 2 tsp. vegetable oil
  • 1 tsp. almond extract
  • 1 tsp. vanilla extract
  • vegetable oil spray


  1. Preheat oven to 350° F. Spray muffin tins lightly with vegetable spray or use paper liners; set aside.
  2. In a bowl, combine oat bran, Pioneer® Golden Light Brown Sugar, nut,s currants, baking powder and salt; mix well. In a small bowl, combine egg whites, milk, honey, oil, almond and vanilla extracts. Add to dry ingredients and mix to blend.
  3. Spoon mixture evenly into muffin cups. Bake 20 – 25 minutes, or until light brown. Serve warm or room temperature.
