Miniature Cheesecakes

  • 1 small box (12 oz.) vanilla wafers
  • 2 pkgs. (8 oz. ea.) cream cheese
  • ¾ C Pioneer® Sugar
  • 2 eggs
  • 1 T vanilla
  • cherry or blueberry pie filling


  1. Preheat oven to 350° F. Line a mini-muffin pan with paper or foil liners; set aside
  2. In food processor crush vanilla wafers. Place 1 tsp. wafers into miniature paper liners; set aside.
  3. Cream together cream cheese, Pioneer® Sugar, eggs and vanilla. Mix until well blended. Fill each paper liner with cream cheese mixture almost to the top. Bake for 15 minutes. Remove and let cool. Top with a dab of filling. Enjoy!
