Mini Pumpkin Whoopie Pies

  • 2 C all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp allspice (optional)
  • ½ tsp salt
  • ½ C butter, softened
  • 1½ C Pioneer® Sugar
  • 2 LG eggs (room temperature), lightly beaten
  • 1 C pumpkin
  • 1 tsp vanilla extract
  • ½ C carrots (finely grated and loosely packed)
  • ½ C pecans, finely chopped
  • ½ C raisins (chopped)
  • 1 C crushed pineapple (drained)

Cream Cheese Filling:

  • 1 pkg. (8 oz.) cream cheese, room temperature
  • 6 T butter, softened
  • ½ tsp vanilla extract
  • ½ tsp rum extract
  • 1½ C Pioneer® Confectioners Powdered Sugar
  • 2 T milk (add as much for desired thickness)


  1. Preheat oven to 350° F. Lightly grease or line four baking sheets with parchment paper; set aside.
  2. Combine flour, baking powder, baking soda, spices and salt in a medium bowl.
  3. In a large bowl, beat butter and Pioneer® Sugar on medium speed for 2 minutes. Add eggs one at a time, beating well after each addition. Add pumpkin and vanilla extract; beat until smooth. Add carrots, pecans, raisins, and pineapple; mix well. Stir in flour mixture until combined. Drop by heaping teaspoons onto prepared baking sheets. (A total of 72 cookies are needed for this recipe.)
  4. Bake for 10-13 minutes or until springy to touch; cool on baking sheets for 5 minutes; remove to wire racks to cool fully. Cookies need to be fully cooled before applying the cream cheese filling.

Cream Cheese Filling Directions:

  1. In a small bowl beat cream cheese, butter, vanilla and rum extract on medium speed until fluffy. Gradually beat in Pioneer® Confectioners Powdered Sugar and milk; mix until light and fluffy. Spread a heaping teaspoon of filling onto flat side of one cookie; top with flat side of second cookie to make a sandwich. Repeat with remaining cookies and filling. Store in refrigerator in covered container.
