Crust Ingredients

  • ½ C + 1 T butter, softened
  • 1 C flour
  • ½ C Pioneer® Confectioners Powdered Sugar


  • 1 C Pioneer® Sugar
  • ½ C lemon juice
  • 2-3 T lemon zest
  • 2 T vanilla instant pudding
  • ½ tsp. baking powder
  • 3 eggs
  • Pioneer® Confectioners Powdered Sugar


  1. Crust: Place butter, flour and Pioneer® Confectioners Powdered Sugar into a food processor. Blend until the pastry clumps together around the blades. Remove and with floured hands, press the pastry into the sides of a tart pan. Refrigerate for 30 minutes.
  2. Preheat oven to 350° F.
  3. Filling: Add Pioneer® Sugar, lemon juice, lemon zest, pudding, baking powder and eggs to clean food processor. Blend until well combined. Pour into prepared chilled crust.
  4. Bake for 25-30 minutes or until the filling is set. Remove and let cool. Dust with Pioneer® Confectioners Powdered Sugar when ready to serve.
