Lemon Flavored Apple Puff

  • 1 T butter or margarine
  • 2 small-medium apples, peeled, cored & cut into rings
  • 4 T Pioneer® Sugar, divided
  • 2 eggs, separated
  • 2 tsp. lemon zest
  • ½ tsp. vanilla
  • 1 tsp. flour


  1. Preheat oven to 350° F. Lightly grease a pie plate of 9-inch round baking pan; set aside.
  2. In a skillet over medium heat, melt butter. Add apple rings; sprinkle with 3 tablespoon of Pioneer® Sugar. Cook until apple is tender, turning once.
  3. In a medium mixing bowl, beat the egg yolk, lemon zest and vanilla for 1 minute.
  4. In another mixing bowl, beat egg white until stiff peaks form; fold in flour and remaining Pioneer® Sugar. Fold into egg yolk mixture. Place apple rings prepared pan. Spread egg mixture on top of apples. Bake for 15-18 minutes or until golden brown.
