Lemon Cream Cheese Muffins

  • ⅔ C Pioneer® Sugar
  • 4 oz. cream cheese, softened
  • 1 egg
  • ⅓ C oil
  • ½ C milk
  • 1 ½ T lemon juice
  • 1 tsp. lemon zest
  • 1 ¼ C flour
  • 1 ½ tsp. baking powder
  • ½ tsp. salt


  • ⅔ C Pioneer® Confectioners Powdered Sugar
  • 2 T lemon juice


  1. Preheat oven to 350° F.
  2. In a large mixing bowl cream the Pioneer® Sugar and cream cheese together. Beat in egg and oil. In a small bowl mix the milk, lemon juice, and lemon zest together. In a separate bowl sift together flour, baking powder and salt. Add the milk mixture and the flour mixture alternately with the cream cheese mixture. Spoon mixture into greased muffin pan or lined with cupcake sleeves. Bake for 15-20 minutes or until done. Remove from pan and set aside.


  1. Sift Pioneer® Confectioners Powdered Sugar into a mixing bowl. Add lemon juice & mix vigorously until smooth & somewhat thick (add water if too thick a teaspoon at a time). Drizzle over semi-warm muffins.
