48221749 - warm homemade gingersnap cookies topped with sugar

Izzie’s Ginger Cookies

  • 1 C Pioneer® Sugar
  • 2/3 C cooking oil
  • 1 egg
  • ¼ C molasses
  • 2 C flour
  • 2 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • ½ C Pioneer® Sugar to roll cookies in


  1. Preheat oven to 350° F. Lightly grease or line baking sheet with parchment paper; set aside.
  2. In a large bowl, mix together Pioneer® Sugar, oil, egg, molasses, flour, baking soda, salt, cinnamon and ginger.
  3. Drop dough by teaspoonful into a dish holding the ½ cup Pioneer® Sugar. Roll dough into ball in the sugar to coat each cookie. Place on prepared pan and press flat with a fork.
  4. Bake for 8-10 minutes. Remove from oven and leave on baking sheet for 3-5 minutes before removing to wire rack to completely cool.
