Italian Bean Rustica

  • 1 lb. bacon, chopped
  • 1 lb. Italian sausage, hot & mild combo
  • 1 ham hock
  • 8 C vegetable broth
  • 1 jar great northern beans, undrained
  • 1 can diced Italian tomatoes
  • 1 C carrots, chopped
  • 1 C celery, chopped
  • 1 onion, chopped
  • salt & pepper to taste
  • mashed potato flakes, to thicken if needed
  • 1 bunch kale
  • red pepper flakes


  1. In a large soup pot, cook the bacon and sausage until done. Drain away all the grease.  
  2. Add the ham hock, vegetable broth, beans, tomatoes, carrots, celery and onion; stir. Cook until vegetables are tender and the soup begins to thicken. Remove the ham hock and add salt & pepper to taste.  
  3. Remove any ham meat from the hock; chopped up and add to the soup. If the soup is not as thick as you’d like, add potato flakes a ½ cup at a time to test the thickness.  
  4. Simmer soup and when near ready to serve add in the kale and red pepper flakes (to taste). Cook until kale is wilted. Serve with Italian bread and butter.
