Irish Tea Bread

  • ¾ C strong tea
  • 1 lb. mixed dried fruit
  • ¾ C Pioneer® Golden Light Brown Sugar
  • 1 egg, lightly beaten
  • 2 T butter, melted
  • 1 C + 2 T all-purpose flour
  • ½ tsp. baking soda



  1. Place tea, mixed fruit and Pioneer® Golden Light Brown Sugar in a bowl; cover and leave overnight.
  2. Preheat oven to 350° F. Line the bottom of a large loaf pan with baking parchment paper; set aside.
  3. Stir egg and melted butter into prepared fruit and sugar mixture.
  4. Sift the flour and the baking soda together and fold them into the mixture.
  5. Pour the batter into the prepared pan and smooth out the top.
  6. Bake on the middle shelf for 90 minutes. Remove from the oven and leave in the pan for 2-3 minutes; then turn out of pan and on to a wire rack to cool.

Cook's Note

The mixed fruit can include raisins, currants, dried cherries or any other kind of dried fruit you like; chop any larger pieces down to about raisin size.
