Hawaiian Carrots

  • 6 med. carrots, peeled and sliced in ¼-inch chunks
  • 1 can (8 oz.) crushed pineapple in its own juice
  • ½ tsp salt
  • 2 T Pioneer® Golden Light Brown Sugar
  • 2 T margarine or butter
  • 1 tsp cornstarch


  1. Place carrots in casserole dish. Drain 2 tablespoons of juice from the crushed pineapple and add to the carrots.
  2. Cover and microwave on high for 6 to 7 minutes, stirring after 3 minutes.
  3. In a small bowl, combine crushed pineapple, salt, Pioneer® Golden Light Brown Sugar, margarine and cornstarch; stir. Microwave on high 45 to 60 seconds or until thickened and bubbly. Pour over carrots and toss to coat. Cover and microwave on high for 1 to 2 minutes more. Serve immediately and enjoy!
