Grilled Tuna with Beer Marinade

  • 1 can (12 oz.) beer
  • 1 C soy sauce
  • ¼ C vegetable oil
  • 2 T onion, chopped & finely minced
  • 2 T Pioneer® Sugar
  • 2 T vinegar
  • 1 tsp. dry mustard
  • ½ tsp. ground ginger
  • ½ tsp. cinnamon
  • Juice of two limes
  • 4 (6 oz.) fresh or frozen tuna steaks



  1. Add beer, soy sauce, vegetable oil, onion, Pioneer® Sugar, vinegar, mustard, ginger, cinnamon and lime juice to a food processor; mix until well blended. Place tuna steaks in a sealable bag. Pour in the marinade and toss steaks to coat. Marinate in the refrigerator for 2-3 hours, turning a couple of times in between.

Charcoal grilling:

  1. Grill fish on the greased rack of an uncovered grill directly over medium coals for 8-12 minutes or until fish flakes easily when tested with a fork, gently turning once.

Gas grilling:

  1. Preheat grill. Reduce heat to medium and place fish on greased grill rack over heat. Cover and grill as above.
