Green Tomato Pie

Pie Crust:

  • 5 C flour
  • 1 tsp. salt
  • 1 lb. lard, room temperature
  • 1 C water
  • 1 egg

Filling Ingredients:

  • 2 lbs. green tomatoes
  • ½ C golden raisins
  • 2 T lemon juice
  • 4 T butter

Spice Ingredients:

  • ¾ C Pioneer® Sugar
  • ¼ tsp. cardamom
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ½ tsp. cinnamon
  • ⅛ tsp. nutmeg
  • 3 T tapioca (quick cooking)
  • Zest of 1 lemon


Crust Directions:

  1. Add flour and salt to a large bowl. Cut lard into flour mixture until crumbs are about pea size. Crack egg into a cup; beat slightly. Add water to egg. Slowly mix egg mixture into flour using pastry blender. Makes 6 crusts. Form into balls and wrap in plastic wrap. Refrigerate 1 hour. Roll and use.

Filling Directions:

  1. Cut green tomatoes into ¼-inch thick slices (Note: if tomatoes are too juicy, remove the seeds.) Add the Pioneer® Sugar and all the spice ingredients together in a bowl; blend. Dip tomato slices completely into the sugar and spice mixture. Arrange the slices in a pie shell. Add golden raisins as you layer the tomatoes. Drizzle with lemon juice and dot with butter. Put on the top crust. Cut slits in the top crust. Brush crust with milk and sprinkle with sugar. Chill pie for 30 minutes.
  2. Preheat oven to 450° F. Reduce the oven heat to 400° F. Bake the pie approximately 55 minutes or until golden brown. Cool before slicing.
