Glazed Carrots, Apples, and Zucchini

  • 2 C carrots, peeled and thinly sliced
  • 1 C zucchini, sliced
  • 3 T water
  • 1 ½ C apple, peeled and thinly sliced
  • ¼ C Pioneer® Golden Light Brown Sugar
  • 1 tsp. cornstarch
  • ½ tsp. ground cinnamon
  • 2 tsp. margarine


  1. Combine carrots and zucchini in a 1-quart microwave safe dish; add water. Cook covered on high for 3 minutes or until carrots are crisp-tender; drain. Gently toss apples into the vegetable mixture.
  2. In a small mixing bowl, combine Pioneer® Golden Light Brown Sugar, cornstarch, cinnamon, and cut in margarine with fork. Sprinkle mixture over top of apple-vegetable mixture. Cover and microwave on high for 3 minutes. Gently toss mixture, coating apples and vegetables with the glaze; cook uncovered 2-3 minutes or until glaze thickens.
