Cookie Crust Ingredients

  • ½ C butter, softened
  • ½ C Pioneer® Golden Light Brown Sugar, firmly packed
  • 1 C all-purpose flour


  • 2 eggs
  • 1 C Pioneer® Golden Light Brown Sugar, firmly packed
  • 1 tsp. vanilla
  • 3 T all-purpose flour
  • ¼ tsp. salt
  • 1 tsp. baking powder
  • 1 bag (3 ½ oz.) flaked coconut
  • 1 C walnuts or pecans, coarsely chopped

Cookie Crust Directions

  1. Preheat oven to 350° F.
  2. In a small bowl cream together butter and Pioneer® Golden Light Brown Sugar. With hands, work in flour until mixture is smooth. Pat into bottom of a 9 x 13-inch ungreased pan. Bake 10 minutes or until golden brown. Cool on wire rack.


  1. In small bowl, beat eggs until light. Gradually beat in Pioneer® Golden Light Brown Sugar. Add vanilla, flour, salt, and baking powder, beating until combined. Stir in coconut and nuts. Spread mixture evenly over cooled crust. Bake 25 minutes or until golden brown and is firm to the touch. Cool.
