  • 2 pkgs. dates
  • 2 tsp. baking soda
  • 1 ½ C boiling water
  • 1 ¾ C Pioneer® Sugar
  • 2 T butter, softened
  • 2 eggs
  • 3 C flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 tsp. vanilla
  • 1 C walnuts, chopped


  1. On a cutting board, chop up the dates, removing any pits. Place into a bowl, sprinkle with baking soda then pour boiling water over the top. Let stand until lukewarm (30 minutes).
  2. Meanwhile preheat the oven to 350° F and lightly grease 2 bread pans; set aside.
  3. In a large mixing bowl add the Pioneer® Sugar and butter; beat until mixed. Add eggs and half of the date mixture; blend. Add flour, baking powder and salt. Beat well. Add the rest of the date mixture, vanilla, and nuts. Mix thoroughly.
  4. Spread dough evenly into prepared pans filling half full. Bake 1 hour or until knife inserted in the middle comes out clean. Cool on wire rack for 5 minutes. Remove from pans and continue to cool on wire rack.
