Creamy Smoked Swiss Mushroom Onion Soup

  • ½ C butter
  • 2 lbs. sliced fresh mushrooms
  • 4 LG onions, chopped
  • 2 qt. beef or chicken broth
  • 2 T paprika
  • 2 T soy sauce
  • 4 tsp dill weed
  • 6 T flour
  • 2 C whole milk
  • 1 pkg. (8 oz.) Swiss Smokey cheese spread
  • ½ C parsley, minced
  • 4 tsp lemon juice
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 C shredded Swiss cheese; reserve some for garnish
  • 8 sliced French bread


  1. In a Dutch oven, heat the butter over medium-high heat. Toss in the mushrooms and onions; cooking until tender. 
  2. Stir in the broth, paprika, soy sauce and dill weed. Bring to a boil. Reduce heat to simmer, cover and cook for 10 minutes.  
  3. In a small bowl, whisk the flour and milk together until smooth. Stir into the soup mixture. Bring to a boil, cook and stir until thickened. Reduce heat to simmer.  
  4. Add Swiss Smokey cheese spread, parsley, lemon juice, salt, pepper and Swiss cheese. Cook and stir until the cheese is melted.  
  5. Meanwhile, top the French bread slices with some shredded Swiss cheese and broil for about 1 – 2 minutes or until the cheese has melted. Serve soup with bread round on top.
