Creamy Chocolate Éclair Dessert

  • 1 small pkg. instant chocolate pudding
  • 1 small pkg. instant French vanilla pudding
  • 3 C milk, divided
  • 1 C Cool Whip®
  • 1 box plain graham crackers


  • 2 squares (1 oz. each) unsweetened chocolate
  • 3 T butter or margarine
  • 1 ½ C Pioneer® Confectioners Powdered Sugar
  • 2 tsp corn syrup
  • 1 tsp vanilla
  • 3 T milk
  • 1 tub Cool Whip® + extra from other tub
  • 1 Hershey’s® chocolate bar to shave for top of dessert


  1. In 2 separate bowls add 1 pkg. of chocolate pudding and 1 pkg. of vanilla. Add 1 1/2 cups of milk to each bowl. Mix well, no lumps.
  2. Add 1/2 cup of Cool Whip® to each bowl of pudding, mixing very well until thick. Blend for at least 5 minutes or longer. Each mixture needs to be very thick and creamy. (Electric mixer works best)
  3. Line a 9 x 13-inch pan with graham cracker squares covering the entire bottom of the pan. Spread the chocolate pudding mixture over the graham crackers evenly and gently. Cover with another layer of graham crackers.
  4. Spread the vanilla pudding mixture over the graham cracker layer, spread evenly very gently. Cover with another layer of graham crackers. Place in the refrigerator while making the topping.


  1. Melt unsweetened chocolate and butter in pan on low heat. Remove from heat and add Pioneer® Confectioners Powdered Sugar, corn syrup, vanilla and 3 T of milk; mix very well until lumps are gone. Spread evenly over top of graham crackers. Refrigerate for at least 8-10 hours allowing dessert to set.
  2. When ready to serve, spread all remaining Cool Whip® on top of Éclair, shave chocolate bar and sprinkle over top of whip cream. Cut, enjoy and refrigerate leftovers.
