Cranberry Cherry Cheesecake Pie

Crust Ingredients

  • 1 ½ C flour
  • 1 tsp. salt
  • 2 tsp. Pioneer® Sugar
  • ½ C coconut oil
  • 2 T milk

Fruit Filling:

  • 8 oz. fresh cranberries
  • ¾ C sweet cherries, pitted & halved
  • 6 T Pioneer® Sugar
  • ½ tsp. lemon zest
  • 1 tsp. lemon juice
  • ½ C water

Cheesecake Filling:

  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 LG egg
  • ½ C Pioneer® Sugar
  • 1 tsp. vanilla

Crumb Topping:

  • ¾ C flour
  • ¼ C Pioneer® Sugar
  • ¼ tsp. baking powder
  • 5 T cold butter, cubed


  1. Preheat oven to 375° F.
  2. In a mixing bowl add flour, salt and Pioneer® Sugar; stir. Add milk and coconut oil. Press into pie plate, flute edges and set aside.
  3. Fruit Filling: Combine cranberries, cherries, Pioneer® Sugar, zest, juice and water in medium saucepan. Bring to a boil over medium-high heat. Reduce to low heat and cook until cranberries start to burst (10-15 minutes). Let cool.
  4. Cheesecake Filling: Add cream cheese and Pioneer® Sugar to a large mixing bowl. Beat on medium with an electric mixer until fluffy. Add egg and vanilla; mix until combined and smooth. Pour into prepared crust.
  5. Drop cranberry mixture in dollops over the cheesecake filling. Lightly run a knife through to swirl.
  6. Crumb Topping: In a small mixing bowl add flour, Pioneer® Sugar and baking powder. Stir to incorporate. Add the cold butter cubes and lightly massage into the dry ingredients until crumbly pieces form. Spread evenly over pie filling.
  7. Bake for 45-50 minutes until cheesecake filling is set. Cook for another 10 minutes if it is not set. Remove and let cool.
  8. Cover and chill 2 hours before serving. Store in refrigerator.
