Chocolate Sin Raspberry Truffle Brownie

Brownie Ingredients

  • 1 ¼ C semi-sweet chocolate chips
  • ½ C margarine
  • 1 tsp instant coffee (optional)
  • 2 T water
  • ¾ C Pioneer® Golden Light Brown Sugar
  • 2 LG eggs
  • ½ tsp baking powder
  • ¾ C all-purpose flour


  • 1 C semi-sweet chocolate chips
  • ¼ tsp instant coffee (optional)
  • 1 pkg. (8 oz.) cream cheese, softened
  • ¼ C Pioneer® Confectioners Powdered Sugar
  • ⅓ C seedless red raspberry preserves


  1. Preheat oven to 350° F. Grease 8 x 8-inch baking pan; set aside.


  1. Melt chocolate chips and margarine in small sauce pan; allow to cool.
  2. In a cup mix water and coffee until dissolved; set aside.
  3. In a mixing bowl beat Pioneer® Golden Light Brown Sugar and eggs together. Add melted chocolate mixture and coffee water; mix well. Stir in baking powder and flour. Blend well.
  4. Bake for 30-35 minutes. Remove from oven and let cool.


  1. In sauce pan over low heat, melt chocolate chips with instant coffee; set aside.
  2. In a mixing bowl beat cream cheese until fluffy, add Pioneer® Confectioners Powdered Sugar and preserves. Beat until fluffy. Beat in chocolate mixture until blended.
  3. Spread over top of cooled brownies. Chill at least 1-2 hours.
