Chocolate Banana Bread

  • ½ C butter or margarine
  • 1 C Pioneer® Sugar
  • 2 eggs
  • 1 C ripe bananas, mashed (about 2 medium)
  • ¼ C milk
  • 1 tsp. vanilla extract
  • 2 C flour
  • ¼ C baking cocoa
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ½ C nuts, chopped (optional)


  1. Preheat oven to 350° F. Grease a loaf pan with cooking spray & lightly flour; set aside
  2. In mixing bowl, cream together butter and Pioneer® Sugar. Add eggs, bananas, milk, and vanilla. Combine flour, cocoa, baking soda, and salt. Add to banana mixture and stir, just until combined. Fold in nuts, if desired.
  3. Put mixture into prepared pan or mini loaf pans. Bake for 60-65 minutes for full loaf (15-20 minutes for mini loaves) or until toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire racks out clean.
