Fresh Delicious Chocolate Brownies on Cupcake Stand

Chocolate Chip Zucchini Cake

  • 1 ½ C Pioneer® Sugar
  • ½ C butter or margarine, softened
  • ¼ C oil
  • 1 tsp vanilla
  • 2 eggs
  • 2 ½ C flour
  • ¼ C unsweetened cocoa
  • 1 tsp baking soda
  • ½ C buttermilk
  • 2 C zucchini, shredded
  • ½ to 1 C semi-sweet chocolate chips
  • ½ C nuts, chopped (optional)


  1. Preheat oven to 350° F. Grease and flour 13 x 9-inch baking pan; set aside.
  2. In a large bowl, combine Pioneer® Sugar, butter, oil, vanilla and eggs; beat well.
  3. Add flour, cocoa, baking soda and buttermilk; blend well.
  4. Fold in zucchini, chocolate chips and nuts. Spread in prepared pan.
  5. Bake for 35-45 minutes or until toothpick inserted in center comes out clean. Cool completely. Frost as desired.
