Chicken Spinach Salad

  • 3 T oil
  • 3 T red wine vinegar
  • 2 T Pioneer® Sugar
  • 3 T unsweetened orange juice
  • ¼ tsp. dry mustard
  • ⅓ tsp. poppy seeds
  • ½ tsp. grated orange rind


  • ½ lb. spinach (14 oz.)
  • 1 ½ C cooked chicken breast, sliced or chopped (1 medium breast)
  • ⅔ C mandarin oranges, well drained
  • 2 C strawberries, sliced or quartered


  1. Combine oil, red wine vinegar, Pioneer® Sugar, orange juice, mustard, poppy seeds and orange zest together in shaker. Shake well. Refrigerate for at least two hours.
  2. Prepare salad by arranging spinach in salad bowl, top with chopped chicken and arrange oranges and strawberries. Pour dressing over top. Mix gently, serve immediately.
