
Chicken Spinach Salad
Ingredients
Dressing:
- 3 T oil
- 3 T red wine vinegar
- 2 T Pioneer® Sugar
- 3 T unsweetened orange juice
- ¼ tsp. dry mustard
- ⅓ tsp. poppy seeds
- ½ tsp. grated orange rind
Salad:
- ½ lb. spinach (14 oz.)
- 1 ½ C cooked chicken breast, sliced or chopped (1 medium breast)
- ⅔ C mandarin oranges, well drained
- 2 C strawberries, sliced or quartered
Directions
- Combine oil, red wine vinegar, Pioneer® Sugar, orange juice, mustard, poppy seeds and orange zest together in shaker. Shake well. Refrigerate for at least two hours.
- Prepare salad by arranging spinach in salad bowl, top with chopped chicken and arrange oranges and strawberries. Pour dressing over top. Mix gently, serve immediately.
