Carrot & Dried Cherry Salad

  • 3 C carrots, shredded (1 lb.)
  • 1 C dried cherries
  • ½ C pecans, chopped
  • 1 C yogurt (plain)
  • ½ C Pioneer® Golden Light Brown Sugar, firmly packed
  • 1 tsp cinnamon


  1. In a large mixing bowl, combine the carrots, dried cherries and pecans; set aside. 
  2. In a small bowl whisk yogurt, Pioneer® Golden Light Brown Sugar and cinnamon together. Let sit for 5 minutes. Whisk again until smooth. 
  3. Pour yogurt mixture over the carrots and cherries; mix well. Chill until serving. Serve over lettuce if desired.
