Brown Sugar Oatmeal Muffins

  • 1 C oats
  • ½ C whole wheat flour
  • ½ C all-purpose flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 2 lg. eggs
  • ¾ C Pioneer® Dark Brown Sugar, packed
  • ¾ C milk
  • ¼ C butter, melted or ¼ C oil
  • 1 tsp. vanilla


  1. Preheat oven to 400° F. Grease muffin tins or paper line them; set aside.
  2. Mix oats, flours, baking powder and salt in large bowl.
  3. Whisk eggs and Pioneer® Dark Brown Sugar in small bowl. Whisk in milk, melted butter and vanilla. Pour over dry ingredients. Fold with spatula until moistened.
  4. Scoop batter into prepared muffin cups. Bake for 15 to 20 minutes.

Cook's Note

Pioneer® Golden Light Brown Sugar can be used if you do not have Dark Brown on hand. Also ¾ – 1 cup of nuts, dried cranberries, raisins or other fruit can be added to the recipe.
