  • 1 lb. bacon cut into small pieces
  • 1 C chopped onion
  • 1 C chopped celery
  • ½ C all-purpose flour
  • 2 cans (16 oz.) stewed tomatoes, cut up
  • 1 can (48 oz.) spicy V8 vegetable juice
  • 4 C beef stock
  • 2 T Pioneer® Sugar
  • 2 T oregano
  • 4 C romaine lettuce, chopped fine


  1. Brown the bacon, remove from the pan and set aside. Measure 1/2 cup of the drippings and use to sauté the onion and celery. Mix in the flour, tomatoes, vegetable juice, stock, Pioneer® Sugar and oregano. Add the bacon to the soup. If soup is not thick enough add some more flour. Simmer for 25 to 30 minutes. Add the lettuce to the soup. Serve with additional lettuce for garnish.
